Best toddler fish pie recipe

Edward has a healthy appetite most of the time (we’ll ignore lunchtimes) and today we ventured out to Mothercare to buy some better bibs. You see he is a very messy eater and I do enough washing so thought that bibs with an attached crumb catcher would help. Me and my sister had these so obviously some products are timeless! Edward wasn’t too sure about the bib but I distracted him with a bowl of his favourite fish pie for dinner:

The recipe is simple but time cosuming. It makes 6 x Edward-sized portions.

 

Ingredients:

2 x cod fillets

250ml milk

5 potatoes

100g broccoli florets

3 carrots

For the cheese sauce:

30g unsalted butter

30g plain flour

400ml whole milk

90g grated cheese

 

Preheat oven to 180 degrees

 

Poach the cod fillets in the milk for 10 minutes, drain and flake.

Boil the potatoes, drain and mash.

Cook the broccoli and the carrots. Chop both into small pieces.

Make the cheese sauce (save some of the cheese for the topping).

Put together the fish pie in a casserole dish – layer the fish first, then the vegetables, mashed potato and cheese sauce and sprinkle the remaining cheese over the top. Cook for 20 minutes. Serve to your little treasure.

 

This freezes really well 🙂
