We’ve had a lot of fun cooking so far this week due to the food we picked at the weekend. We’re not big soup eaters/drinkers but it was the only thing I could think of faced with so many tomatoes!
Recipe for tomato soup:
- 1 onion
- 300g tomatoes
- 20g butter
- 1 big squidge of garlic puree
- 1tsp of paprika
- 1 tsp tomato puree
- 2 tsp sugar
- 1 vegetable stock cube and 300ml water
- double cream to serve
Simply fry the onion in the butter, then add the paprika, garlic and tomato puree. Add the chopped tomatoes, sugar and stock and bring to the boil before leaving to simmer for at least 20 minutes.
Blend the soup then sieve to remove the skin and seeds.
Reheat the soup and add the cream before serving.
This was enough for three healthy portions. I wasn’t sure what the toddler would think of soup, as he’s never had it before, but he enjoyed it!
