We were invited to take part in a BBQ recipe challenge. The weather has cooled down a lot today so we had our second barbecue of the year and cooked some delicious spare ribs with BBQ sauce. I’m not sure if this counts as a typically British main meal but it was delicious and pretty simple, ready to eat in under an hour.
In a bowl place the spare ribs (we used beef) and add a bunch of chopped spring onions, a generous dollop of garlic puree and pinch of chilli powder. Add to this 6 tbsp demerara sugar, 6 tbsp soy sauce, 6 tbsp clear honey and 6 tsp mustard. Make sure the ribs are completely covered in the marinade, cover and leave in the fridge for 30 minutes.
The ribs were transferred to the BBQ and cooked for about 20 minutes until thoroughly cooked. The remaining sauce was added to the ribs while they were cooking, leaving lovely sticky ribs!
So the photo is not very inspiring, you’ll just have to take my word for it that it tasted good. We served it with lots of lovely fresh salad, including beetroot which the toddler had for the first time and really enjoyed.
