Gingerbread for toddlers

I like to think that one of the toddler’s first words was gingerbread but he’s actually only learned it recently. It’s a firm family favourite and when I presented the toddler with a plate of dinosaur gingerbread biscuits earlier he immediately exclaimed “Gingerbread!”

I thought I would share my recipe for never-fail gingerbread.

Makes 20 biscuits

Takes 30 minutes (20 mins to prepare and 10 mins to bake)

Ingredients:

  • 350g plain flour
  • 1tsp bicarbonate of soda
  • 2 tsp ground ginger
  • 100g butter
  • 175g light muscovado sugar
  • 4tbsp golden syrup
  • 1 large egg

Method:

Preheat the oven to 180° and line or grease two baking trays.
Mix the flour, bicarbonate of soda and ginger in a bowl, then rub in the butter using your fingertips. Add the sugar, golden syrup and eggs and mix until you have a dough.
Roll out the dough to about 5mm thick and cut out your desired shapes.
Bake in the oven for about 10 minutes or until they are golden.
