Tomorrow we going to the Gruffalo Activity Trail at Wendover Wood. We’re taking a picnic and I thought some homemade Gruffalo Crumble Cupcakes would go down well. Yesterday I made the cupcakes and today I finished them off.
To make the cakes you will need:
175g soft butter
175g caster sugar
3 eggs
1/2 teaspoon vanilla extract
150g self-raising flour
1/2 teaspoon baking powder
1 tablespoons of Horlicks
3 tablespoons of chocolate powder
2 tablespoons of milk
For the icing:
120g softened butter
260g icing sugar
2 tablespoons of Horlicks
Maltesers
To make the cupcakes I creamed together the butter and sugar, added the eggs then the remaining dry ingredients. Bake at gas mark 4 (or 180°C ) for 20-25 minutes.
When the cakes have cooled you can decorate them. I mixed the butter, icing sugar and Horlicks using my hand mixer. You can add a dash of milk if necessary. I used a piping bag and nozzle to pipe the buttercream on. I divided the Maltesers in two, placed one on top of each cake and smashed the remaining Maltesers with a rolling pin and sprinkled them on top.
Yummy cakes – and almost no calories, hem hem………….xxxx

Nom nom nom, have never used Horlicks in cooking, ever! So will be intrigued to try them. Great recipe, love the inspiration behind the cakes too.
